Palm Kalkandam (also called Panam Kalkandu or palm candy) is a natural, crystalline sweetener made from the sap of palm trees, especially the palmyra or toddy palm. The sap is collected from the flowering part of the palm, boiled down to a thick syrup, and then allowed to crystallize into hard, rock‑like sugar crystals.
